So I love to cook (most of the time). What I enjoy most is creating recipes and discovering that they are pretty good! Well at least I think so. So I decided to actually document some of my creations/inspirations because if I don't in time I forget my own recipes ingredients! So bon appetit!
Cajun Tilapia
1/2 cup of butter or margarine softened
1/2 teaspoon of cajun seasoning (includes garlic, red pepper, black pepper, onion)
1/2 of a lemon's juice
4 or 1lb of tilapia fillets
- Soften butter or margarine to reach a liquid consistancy.
- Add cajun seasoning to melted butter or margarine, mix.
- Place tilapia fillets in glass dish
- Drizzle butter/margarine/cajun seasoning mixture over fillets
- Squeeze half of a lemon's juice over fillets
- Add more Cajun seasoning to fillets (if desired)
- Bake for 30 minutes in oven at 450 degrees
For garnish:
- chopped up white onion, tomatoes and chives
- squeeze half of a lemon's juice over mixture, mix well.

Served with black beans and yellow rice

Bobby and I are celebrating our 2nd Wedding Anniversary today. In addition, we are also celebrating six years together. Bobby and I met at Del Mar College. We were both journalism majors and it was really love at first sight. When I first saw him, instantly I knew that I could spend a lot of time with him. He seemed very easy going and extrememly likable. He was! Six years later we have both graduated with Jourmalism/Advertising/PR degrees a three year old daughter and are going strong. I love you Bobby.
